There’s nothing like those jumbo muffins you see in bakery’s window… well I’m here to tell you you can make them at home with better for you ingredients BUT no one will be able to tell these are healthier for you😉
-to a bowl add flour and baking powder and stir with spoon
-in a separate bowl using a hand mixer, mix together butter and maple syrup (if the butter is clumpy put mixture in microwave for 15ish seconds or until clumps are gone)
-then add in eggs, vanilla, and almond milk to the wet mixture and beat for a few minutes with hand mixer
-pour dry ingredients into wet ingredients and mix with spoon
-fold in chocolate chips
-to achieve bakery style muffins, line every other muffin cup to allow room for muffins to expand (my muffin pan had 12 holes and I only did 6 big muffins)
-overfill the muffins cups with batter, you shouldn’t be able to see the muffin liners)
-bake in oven on 425F for 5min ONLY
-then reduce heat to 350F and continue baking for 25-27min or until tooth pick comes out clean
-allow muffins to cool for a few minutes and enjoy!
