A high-protein breakfast hash perfect for happy hormones and easy meal prep. It features roasted sweet potatoes, sautéed bell peppers, onions, spinach, and pre-cooked beef sausage, topped with eggs.
Preheat oven to 400F. Line a baking sheet with parchment paper. Add diced sweet potatoes to the sheet, coat with 1 tbsp olive oil, and season with garlic powder, paprika, and oregano. Bake potatoes for 45 minutes until tender and crispy. While potatoes are baking, heat a pan over medium heat and add 1 tbsp olive oil. Add pre-cooked sliced sausage to the pan and cook for 2-3 minutes. To the same pan, add the diced bell peppers and onions; cook until vegetables are tender and sausage is done. Toss in spinach and cook until wilted. To a separate skillet, cook eggs (over easy recommended). Once potatoes are done, add to a plate and top with the bell pepper mixture and eggs. Enjoy!
