These high-protein chickpea truffles are made with only 3 simple ingredients and come together in about 30 minutes. They are a healthy and delicious dessert.
Drain and rinse the can of chickpeas. Melt dark chocolate in the microwave or on the stovetop using a double boiler. Add chickpeas, nut butter, and 1 cup of melted chocolate to a food processor or blender and blend until smooth and creamy. Scoop the batter out, roll into balls, and place them on a baking sheet lined with parchment paper. Place the balls into the freezer for about 15-20 minutes to harden, then remove from the freezer and roll into smoother balls. While the balls are freezing, melt the additional 1 cup of chocolate for dipping along with 1 tbsp coconut oil. Dip the balls into the melted chocolate and coat completely, then place them back into the freezer until completely hardened. Enjoy right away and store leftovers in the fridge for 7-10 days or in the freezer for 1-2 months.
