This Ezekiel bread is made with 8 different grains and legumes mentioned throughout Scripture like wheat, barley, spelt, and millet which are incredibly nutrient dense and supports digestion and steady energy.
1. Combine all grains, lentils, and beans and grind into flour using a grain mill. Store any extra flour for later.
2. If using active dry yeast, mix it with a little warm water and honey and let sit for 5–10 minutes until foamy.
3. In a large bowl, combine 4–4 1/2 cups of the flour blend with salt. Add water, honey, olive oil, and yeast mixture.
4. Mix until a sticky dough forms, then knead for about 6min in a stand mixer.
5. Place dough in a greased bowl, cover, and let rise for 1 hour.
6. Shape into 1–2 loaves and let rise another 30 minutes.
7. Bake at 350°F for about 35–50 minutes, depending on loaf size and flour texture, until golden brown and hollow sounding when you tap it.
8. Let cool completely before slicing. Enjoy!
