SALTED CARAMEL OATMEAL CHOCOLATE CHIP COOKIES (GF + DF)
15 mins prepServes 6
These delicious salted caramel oatmeal chocolate chip cookies are gluten-free and dairy-free, made with healthier ingredients like bananas, nut butter, and maple syrup, and feature a homemade date caramel sauce.
To make the caramel sauce: add pitted dates, almond milk, vanilla, and a pinch of salt to a food processor and pulse until smooth. Set aside.
To make the cookies: add bananas to a bowl and mash with a fork. Add the rest of the cookie ingredients (nut butter, maple syrup, rolled oats, cinnamon, dash of vanilla, pinch of salt, dark chocolate chips) to the bowl and mix well. If the mixture is too runny, add a little more oats.
Line a baking sheet with parchment paper. Scoop dough out of the bowl and form balls. Lightly press down on the dough and make a small hole in the middle using your fingers or the stem of a spoon. Fill each hole with about 1 teaspoon of the homemade caramel sauce.
Bake cookies at 350°F (175°C) for 15-17 minutes. Enjoy!
