Who else used to love those strawberry shortcake ice cream bars during the summer?? I’ve been craving them recently and these banana pops did not disappoint😍
To a food processor add shortbread cookies and pulse until cookies are crumbled. Add in freeze dried strawberries and pulse a few more times. Cut bananas in half and insert popsicle stick. Pour coconut yogurt in large bowl and dip bananas into bowl until evenly coated with yogurt. Sprinkle strawberry shortcake crumble on bananas. Line a baking sheet or cutting board with parchment paper and place bananas on paper. Freeze for at least 2 hours or until hardened, store leftovers in freezer.
